Parmesan Fries with Truffle Mayonnaise

The ultimate dunking companion…


  • 1kg potatoes such as Maris pipers
  • All the parmesan finely grated 
  • Salt and pepper
  • Vegetable / peanut oil
  • 1 jar of Nerd Truffle Mayonnaise 


  1. Wash and chop the potatoes into your desired size, leave the skin on
  2. Bring to the boil in salted water
  3. Strain and leave to cool on a tray in the fridge
  4. Bring a pot of oil / air fryer to the 180 degrees oil, follow all safety instructions
  5. Cook until light golden brown
  6. Remove and cool again
  7. Fry one more time until golden brown
  8. Strain and place in a bowl
  9. Coat with salt, pepper and parmesan tossing as you go
  10. Garnish with chives if you like but otherwise get dunking!
